Les Jardins from Pierre Hermé- 12.13.12

phMAINimage.jpg Here’s the latest from our resident zoologist and London based editor, Justine Aw.

On a freezing, wintry day, we left the chilly Portland Square to find ourselves in a warm, decadent room filled with inviting floral displays and delectable macarons! The perfect taste of Parisian spring in a London winter! When we heard Pierre Hermé were launching their 2013 ‘Les Jardins’ collection, we knew we were in for a treat, but had no idea of the delicious and unusual flavor combinations that awaited! More previews of the new collection on the next page!

The centrepiece of the new collection is a brand new line of eleven new limited edition macarons, each inspired by Nature, Les Jardins 2013.

The new collection had pride of place in the room, nestled in elegant glass bell jars on a beautifully decorated table filled with botanical inspiration.

pierreherme2013-9856.jpg May 2013 will see the introduction of the delicious Jardin d’Ambre (Rose & Ambergris).

pierreherme2013-9858.jpg The Jardin Japonais, a sakura-inspired macaron with morello cherry, lemon and tonka bean. The surface of these macarons is stunningly beautiful, an almost pearlescent pink.

We had the chance to sample the entire scrumptious range, and here they are!

  • January: Jardin Pamplemousse (Grapefruit, Clove, Nutmeg & Candied Grapefruit)
  • February: Jardin Sucré (Caramel & Rose)
  • March: Jardin du Maquis (Chocolate & Honey from the Maquis Shrubland Region of Corsica)
  • April: Jardin Japonais (Morello, Cherry, Lemon & Tonka Bean)
  • May: Jardin d’Ambre (Rose & Ambergris)
  • June: Jardin Potager (Apple, Mint, Cucumber & Roquette)
  • July: Jardin Fruité (Lime & Red Berries)
  • August: Jardin Andalou (Mandarin Orange, Olive Oil & Red Berries)
  • September: Jardin Merveilleux (Mandarin Orange, Olive Oil & Cucumber Water)
  • October: Jardin dans les Nuages (Chocolate & Smoked Salt)
  • November: Jardin dans les Bois (Vanilla, Old Gold Agricultural Rum & Cider Wood)

With such a feast of flavors, it’s difficult to share all of the unique combinations, but here are a few of our favorites. I love the idea of Ambergris in macarons! Such an unusual ingredient, famous for holding scent and perfect with such an aromatic floral note, such as rose. The Jardin Potager with apple, mint, cucumber and arugula, was one of the most unusual macaron I’ve tried, with an almost savory flavor. I also loved the Jardin dans les Bois with vanilla, old gold agricultural rum and cedar wood, which was just simultaneously gorgeously vanilla flavored and woody! Another favorite was August’s Jardin Andalou, which had a refreshingly zingy citrus flavor in the hidden compote.

The launch also introduced a special Valentine’s day Macaron Yasamine (Macaron biscuit, jasmine tea cream, mango compote and house candied grapefruit) and a new series of chocolate discs (Les Galets) and gave us the opportunity to drool over the new stunning book, ‘Au coeur du goût’ which was published in October (sadly only available in French).

In addition to the deliciousness, I particularly loved the photography that really captures the flavors and seasons!
